Luscious Lobster Pasta
You deserve a special meal 🫶 I made this lobster pasta inspired by our favorite dish we had in Italy on our honeymoon, and it certainly did not disappoint!! 😍 Go get yourself some lobster and make this luscious pasta 🍝🦞
Luscious Lobster Pasta
Serves 3-4
INGREDIENTS
🔸4 4oz Lobster Tails in the shells (or more if you prefer extra lobster)
🔸3-5 large Carrots, chopped
🔸3 Stalks Celery, chopped
🔸1 Yellow Onion, quartered
🔸6-8 Garlic Cloves, whole but crushed
🔸2 pints Cherry Tomatoes
🔸1 bottle Very Dry White Wine
🔸Tomato Paste
🔸Fresh Parsley
🔸Fresh Thyme
🔸Fresh Bay Leaves
🔸Red or Green Chili Pepper (optional, omit if you don’t like spice)
🔸1 box Spaghetti or Linguine
🔸Olive Oil
🔸Freshly Ground Salt + Pepper
INSTRUCTIONS
1️⃣ Bring a large pot of water to a boil. Add the raw lobster tails into the water and boil for 4 minutes. When the lobster is done, transfer the lobster into a bowl of ice water and set aside, then pour the water you boiled the lobster in into a large bowl and set aside as well. It’s important not to get rid of this water!
2️⃣ Separate the lobster meat from the shells and place the meat into a covered bowl in the fridge. In the pot you boiled the lobster in, add oil over medium heat. Once hot, add in the lobster shells and sauté for 1-2 minutes. Add in prepped carrots, celery, onion, and garlic, and sauté for 3-5 minutes. Add in half a tube of tomato paste and mix until combined, about 2 minutes. Add in 1 pint cherry tomatoes and 1 and 3/4 cups of dry white wine and stir to combine. Let simmer for 2-3 minutes, then add in the lobster water, fresh parsley, fresh thyme, fresh bay leaves, salt, and pepper. Stir to combine and bring to a boil. Once boiling, reduce to a simmer, put the lid on the pot and let simmer for 1-2 hours. The longer you simmer, the more flavorful the sauce.
3️⃣ Once the time has passed, strain the liquid through a mesh sieve into another pot over low-medium heat. Make sure to not get any of the hard ingredients (veggies, shells, herbs, etc) into the strained sauce, and then throw those ingredients away.
4️⃣ Place a large saucepan on medium heat (saucepan should be large enough to fit your spaghetti/linguine long ways), adding in olive oil. Chop the lobster tails long ways and then into chunks. Thinly slice 2 garlic cloves and 1 red or green chili (if you’d like to add some heat/spice), then add the garlic and chili into the oil. Sauté for 1 minute, then add the lobster. Sauté for 1-2 minutes, then set aside the lobster in a separate bowl.
5️⃣ Use a measuring cup to add in a few cups of the lobster sauce to the same skillet you sautéed the lobster in. Bring to a boil, and add in your dry pasta. Stir continuously, adding more lobster sauce as needed. Once the pasta is a little soft, add in a pint of cherry tomatoes and more lobster sauce, and stir to combine. Place a lid on the saucepan and let simmer for 3-5 minutes.
6️⃣ Once time has passed, remove the lid and stir, crushing the softened cherry tomatoes with your spoon or tongs. Test the pasta to make sure it is al dente, then add in 3/4 lobster and 3/4 cup minced fresh parsley. Stir to combine, and add more lobster sauce as needed (but the sauce in the pasta shouldn’t be runny). Spin the pasta with tongs and serve immediately, topping with more minced fresh parsley and remaining 1/4 lobster.
NOTES
🔶Before you start to cook, I always recommend prepping your ingredients. Set yourself up for success so you’re not scrambling between steps to prep ingredients.
🔶I listed all of the ingredients as their most basic form so that it is accessible to all. When I make this recipe myself, I do my best to use all organic, gluten free, and dairy free ingredients (though I always make exceptions for cheese).
🔶If you do not like spicy things, DO NOT ADD THE CHILI PEPPER TO THE LOBSTER.
