Garlic Parmesan Pasta with Italian Sausage, Spinach, + Roasted Butternut Squash

Garlic Parmesan Pasta with Italian Sausage, Spinach, + Roasted Butternut Squash

Serves 3-5 (depending on how much you serve per person)

INGREDIENTS

🔸12 oz Farfalle Pasta (or 1 box)
🔸2 cups Butternut Squash (cubed)
🔸1 lb Italian Sausage
🔸6-8 Garlic Cloves, minced
🔸6-8oz Fresh Spinach
🔸1 cup Heavy Cream
🔸1/3 cup Parmesan Reggiano, freshly grated
🔸Olive Oil
🔸Italian Seasoning
🔸Red Pepper Flakes
🔸Freshly Ground Salt + Pepper

INSTRUCTIONS

1️⃣ Preheat oven to 400 degrees, and place a large pot of water on high heat.

2️⃣ Toss butternut squash, olive oil, salt and pepper in a bowl, then spread the squash out in a single layer on a parchment paper lined baking sheet. Roast in preheated oven and set your timer for 30-35 minutes.

3️⃣ Over medium-high heat, heat olive oil in a medium skillet, then add crumbled sausage and cook until browned. Mix in italian seasoning and red pepper flakes, then pour cooked crumbled sausage into a bowl and set aside.

4️⃣ When your large pot of water begins to boil, add salt, then add pasta and cook as instructed on the box.

5️⃣ In the same skillet, add olive oil and minced garlic over medium heat and sauté 30-60 seconds. Add in fresh spinach and mix continuously until spinach wilts. Add heavy cream and bring to a brief boil, then immediately reduce heat to simmer. Add freshly grated parmesan cheese (even though you want to, do not add more cheese than instructed or else it will become too thick - you can add more on top at the end), and mix until the cheese melts. Season with salt and pepper to taste.

6️⃣ Drain the pasta when it’s done, and remove roasted butternut squash from the oven when it’s done. Add cooked crumbled sausage into the garlic parmesan sauce and stir to combine. Then, add in cooked pasta and stir to combine.

7️⃣ Scoop pasta into a bowl and top with roasted butternut squash, freshly grated parmesan reggiano, and freshly ground pepper. Serve immediately.

🌟Before you start to cook, I always recommend prepping your ingredients. Set yourself up for success so you’re not scrambling between steps to prep ingredients.
